Like most families, we are short on time right now. I wanted to share a family dinner idea that worked out very well for us last night. It involves one set of ingredients and makes a delicious meal for toddlers and adults.
Ingredients:
1 rotisserie chicken (available at your local deli)
1 pkg Ciabatta rolls (or any type of sandwich roll that you prefer)
carrots
pineapple (fresh from the salad area of grocery store)
feta cheese
olive oil, balsamic vinegar, salt and pepper
Basil
Adult Meal: Chicken and Feta Sandwich on Toasted Ciabatta with steamed carrots and fresh pineapple.
Toast bread for sandwiches and drizzle with olive oil and balsamic vinegar to taste. Top with shredded chicken, fresh basil leaves, and crumbled feta. Add salt and pepper to taste. Serve with carrots and pineapple
Toddler Meal: Roast chicken with steamed carrots, fresh pineapple, and ciabatta toast with butter.
